Scale
- 1 pound cod or tilapia, cut into strips
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 cup all purpose flour
- 2 large eggs, beaten
- 1 cup panko breadcrumbs
- Olive oil spray, as needed
- 8 small corn tortillas
- 2 ripe avocados, diced
- 1 medium tomato, diced
- 1 small red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons fresh lime juice
Instructions
- Preheat the air fryer to 400 degrees F for 5 minutes.
- In one bowl mix flour, salt, black pepper, chili powder, and garlic powder. In a second bowl beat the eggs. Place panko breadcrumbs in a third bowl.
- Lightly spray the air fryer basket with olive oil spray.
- Dip each fish strip into the seasoned flour, then into the beaten eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.
- Arrange fish in a single layer in the basket. Lightly spray the tops with olive oil spray. Cook for 8 to 10 minutes, flipping halfway through, until golden and cooked through.
- In a bowl combine diced avocados, tomato, red onion, cilantro, and lime juice. Gently toss to make the salsa. Warm the corn tortillas.
- Fill each tortilla with crispy fish and top with avocado salsa. Serve immediately.
Notes
- Do not overcrowd the air fryer basket for even crisping.
- Serve immediately for best texture.
- Add extra lime juice before serving for a brighter flavor.
- Reheat leftovers in the air fryer to restore crispiness.
