Description

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 1/2 cups fresh blueberries
  • Powdered sugar for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line tart pans on a baking sheet.
  2. In a food processor, pulse flour, powdered sugar, and salt. Add cold butter and pulse until crumbly.
  3. Press dough into tart pans and chill for 15 minutes.
  4. Prick crusts with a fork and bake for 10 minutes. Let cool.
  5. In a bowl, whisk almond flour, granulated sugar, eggs, vanilla, and almond extract until smooth.
  6. Spoon filling into cooled crusts and bake for 20–25 minutes until golden and set. Let cool completely.
  7. Top each tart with fresh blueberries and dust with powdered sugar before serving.

Notes

  • Use cold butter for flakier crusts.
  • Don’t thaw frozen berries if substituting for fresh.
  • Glaze berries with apricot jam for extra shine.
