Instructions
- In a large skillet, cook sliced andouille sausage over medium heat until browned. Remove and set aside.
- In the same skillet, melt butter. Add onion, bell pepper, and garlic; sauté until softened.
- Stir in flour and cook for 2-3 minutes, stirring constantly, to make a roux.
- Gradually whisk in chicken broth, ensuring no lumps form.
- Add Cajun seasoning, smoked paprika, salt, and pepper.
- Return sausage to the skillet and simmer gravy for 10-15 minutes until thickened.
- Garnish with fresh parsley if desired and serve over biscuits or rice.

- For a thicker gravy, cook longer or add a slurry of flour and water.
