Description

Ingredients

  • 2 large eggs
  • 4 tablespoons hummus
  • 1 small bell pepper, chopped
  • 1 small zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Toss chopped bell pepper, zucchini, and cherry tomatoes with olive oil, salt, black pepper, and paprika.
  3. Spread the vegetables on a baking sheet and roast for 18 to 22 minutes until tender and lightly caramelized.
  4. Toast the bagel slices lightly in a skillet. Flip them and crack an egg directly into each hole.
  5. Cook until the egg whites are set while the yolks remain soft, about 4 to 6 minutes.
