- 2 bagels, sliced
- 2 large eggs
- 4 tablespoons hummus
- 1 small bell pepper, chopped
- 1 small zucchini, chopped
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat the oven to 425 degrees Fahrenheit.
- Toss chopped bell pepper, zucchini, and cherry tomatoes with olive oil, salt, black pepper, and paprika.
- Spread the vegetables on a baking sheet and roast for 18 to 22 minutes until tender and lightly caramelized.
- Toast the bagel slices lightly in a skillet. Flip them and crack an egg directly into each hole.
- Cook until the egg whites are set while the yolks remain soft, about 4 to 6 minutes.
- Spread hummus on each bagel and top with roasted vegetables.
- Finish with fresh parsley and serve warm.
