Description

Baked Rice Pudding is a warm, nostalgic dessert made with tender rice, creamy milk, sweet sugar, and a hint of cinnamon, baked to perfection for a comforting treat.


Ingredients

  • 1 cup cooked white rice
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup raisins (optional)
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 325°F (160°C). Lightly grease a 2-quart baking dish.
  2. In a large bowl, whisk together milk, sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  3. Stir in the cooked rice, raisins (if using), and melted butter.
  4. Pour the mixture into the prepared baking dish.
  5. Place the baking dish in a larger roasting pan and pour hot water into the outer pan until it reaches halfway up the sides of the pudding dish (water bath).
  6. Bake for 50–60 minutes, or until the pudding is set but slightly creamy in the center.
  7. Remove from oven, cool slightly, and serve warm or chilled.

Notes

  • For extra richness, use half-and-half instead of whole milk.
  • You can substitute golden raisins or dried cranberries for a twist.
