Description

Ingredients

  • 3 medium ripe bananas, mashed
  • 2 large eggs
  • 1 1/2 cups milk
  • 1/4 cup maple syrup
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F and lightly grease an 8×8 inch baking dish.
  2. In a large bowl, whisk together the eggs, mashed bananas, milk, maple syrup, melted butter, and vanilla extract until smooth.
  3. Stir in the rolled oats, ground cinnamon, baking powder, and salt until just combined.
  4. Pour the mixture into the prepared baking dish and spread evenly. Add extra banana slices on top if desired.
  5. Bake for 35 to 40 minutes until the center is set and the top is golden brown.
  6. Allow to cool for 10 minutes before slicing.
  7. Slice into squares and serve warm.
