- 2 cups old fashioned rolled oats
- 3 medium ripe bananas, mashed
- 2 large eggs
- 1 1/2 cups milk
- 1/4 cup maple syrup
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F and lightly grease an 8×8 inch baking dish.
- In a large bowl, whisk together the eggs, mashed bananas, milk, maple syrup, melted butter, and vanilla extract until smooth.
- Stir in the rolled oats, ground cinnamon, baking powder, and salt until just combined.
- Pour the mixture into the prepared baking dish and spread evenly. Add extra banana slices on top if desired.
- Bake for 35 to 40 minutes until the center is set and the top is golden brown.
- Allow to cool for 10 minutes before slicing.
- Slice into squares and serve warm.
Notes
- Use very ripe bananas for the best natural sweetness and flavor.
- Let the baked oatmeal rest before slicing for cleaner squares.
- Store leftovers covered in the refrigerator for up to 4 days.
- Freeze individual slices for up to 2 months and reheat as needed.
