Description

Ingredients

  • 3 cups whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup all purpose flour
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 tablespoon vanilla extract
  • 4 ripe bananas, sliced
  • 1 box (about 11 ounces) vanilla wafer cookies
  • 1 cup whipped topping (optional)

Instructions

  1. In a saucepan over medium heat, whisk together sugar and flour.
  2. Gradually add milk, whisking until smooth. Cook while stirring constantly until thickened.
  3. In a small bowl, whisk egg yolks. Slowly add a small amount of the hot mixture to temper the yolks, then return to the saucepan.
  4. Cook for 2 to 3 more minutes until thick and smooth. Remove from heat and stir in butter and vanilla.
  5. Allow pudding to cool slightly.
  6. In a glass dish, layer vanilla wafers, sliced bananas, and pudding. Repeat layers, finishing with pudding on top.
  7. Chill for at least 4 hours.
  8. Top with whipped topping if desired and serve chilled.

Notes

  • Use ripe but firm bananas.
  • Chill thoroughly for best texture.
  • Cover tightly to prevent browning.
