Ingredients

- 3 cups whole milk
- 3/4 cup granulated sugar
- 1/4 cup all purpose flour
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 1 tablespoon vanilla extract
- 4 ripe bananas, sliced
- 1 box (about 11 ounces) vanilla wafer cookies
- 1 cup whipped topping (optional)
Instructions
- In a saucepan over medium heat, whisk together sugar and flour.
- Gradually add milk, whisking until smooth. Cook while stirring constantly until thickened.
- In a small bowl, whisk egg yolks. Slowly add a small amount of the hot mixture to temper the yolks, then return to the saucepan.
- Cook for 2 to 3 more minutes until thick and smooth. Remove from heat and stir in butter and vanilla.
- Allow pudding to cool slightly.
- In a glass dish, layer vanilla wafers, sliced bananas, and pudding. Repeat layers, finishing with pudding on top.
- Chill for at least 4 hours.
- Top with whipped topping if desired and serve chilled.
Notes
- Use ripe but firm bananas.
- Chill thoroughly for best texture.
- Cover tightly to prevent browning.
