- 1 pound large shrimp, peeled and deveined
- 1/2 cup cornstarch
- 1/2 cup buttermilk
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha sauce
- 1 teaspoon rice vinegar
- 8 lettuce cups or mini slider buns
- 2 green onions, sliced
- 1 teaspoon sesame seeds
- Salt and pepper, to taste
- 2 cups frying oil
Instructions
- Heat oil in a skillet over medium-high heat until hot and shimmering.
- In one bowl, mix cornstarch, salt, and pepper. In another bowl, pour buttermilk.
- Dip shrimp into buttermilk, then coat evenly in cornstarch.
- Fry shrimp in small batches for 2–3 minutes per side until golden and crispy.
- In a separate bowl, whisk mayonnaise, sweet chili sauce, sriracha, and rice vinegar until smooth.
- Toss the fried shrimp gently in the sauce until fully coated.
- Arrange shrimp in lettuce cups or slider buns.
- Sprinkle with green onions and sesame seeds, then serve immediately.
Notes
- For extra crunch, double-fry the shrimp briefly before saucing.
- Add lime juice for a bright, fresh twist.
- To make it lighter, air fry or bake the shrimp instead of deep frying.
