- 1 lb thinly sliced beef top round or flank steak
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup ricotta cheese (optional)
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 2 cups marinara or tomato sauce
Instructions
- Lay beef slices flat and season with salt and pepper.
- In a bowl, mix breadcrumbs, Parmesan, garlic, parsley, and ricotta if using.
- Spread filling evenly over beef slices.
- Roll each slice tightly and secure with toothpicks or kitchen twine.
- Heat olive oil in a large skillet over medium heat. Brown beef rolls on all sides.
- Pour marinara sauce over the rolls, reduce heat, and simmer covered for 1 to 1.5 hours until beef is tender.
- Remove toothpicks before serving. Serve with sauce and pasta or crusty bread.
