  • 1 medium onion, finely chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 3/4 cup sour cream
  • 1 tablespoon all purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 ounces egg noodles, cooked

Instructions

  1. Heat olive oil in a large skillet over medium high heat.
  2. Season the beef with salt and pepper.
  3. Add beef to the skillet and cook until browned, then remove and set aside.
  4. In the same skillet, cook onions and mushrooms until soft and lightly golden.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Sprinkle in flour and stir well to coat the vegetables.
  7. Slowly pour in beef broth and simmer until the sauce thickens slightly.
  8. Lower the heat and gently stir in sour cream.
  9. Return beef to the skillet and warm through without boiling.
  10. Serve hot over cooked egg noodles.
