Description

This quick and healthy berry chia seed jam is naturally sweetened and thickened with chia seeds. It’s perfect for spreading on toast, stirring into oatmeal, or dolloping on yogurt.


Ingredients

  • 2 cups mixed berries (fresh or frozen)
  • 2 to 3 tablespoons maple syrup
  • 2 tablespoons chia seeds
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Add the berries to a saucepan and heat over medium, stirring occasionally until they start to break down, about 5 to 10 minutes.
  2. Use a fork or masher to break down the berries to your desired consistency.
  3. Stir in maple syrup, lemon juice, and vanilla extract.
  4. Remove from heat and stir in chia seeds.
  5. Let the mixture sit for 10 minutes, stirring once or twice as it thickens.
  6. Taste and adjust sweetness if needed. Let cool completely before storing.
