Description
This creamy and fruity Berry Fool is a light, dreamy dessert made with whipped cream and sweet-tart berries. Perfect for summer or any time you want an easy yet elegant treat.
Ingredients
Scale
- 2 cups mixed berries (strawberries, raspberries, blueberries, or blackberries)
- 3 tablespoons granulated sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
Instructions
- Chill your mixing bowl and beaters in the fridge for about 10 minutes.
- In a saucepan over medium heat, combine the berries, 2 tablespoons of sugar, and lemon juice. Cook for 5–7 minutes until the fruit breaks down. Let it cool.
- In the chilled bowl, whip the cream with the remaining 1 tablespoon of sugar and vanilla until soft peaks form.
- Gently fold the cooled berry mixture into the whipped cream, creating pretty swirls.
- Spoon into serving glasses and chill for 30 minutes or serve immediately.
Notes
- Use a mix of berries for the best flavor and color.
- Don’t overwhip the cream—stop at soft peaks for the lightest texture.
- Make ahead and chill for up to 4 hours for even better flavor.
