Berry Fool

  • Total Time: 17 minutes
  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

This creamy and fruity Berry Fool is a light, dreamy dessert made with whipped cream and sweet-tart berries. Perfect for summer or any time you want an easy yet elegant treat.

Ingredients

Scale
  • 2 cups mixed berries (strawberries, raspberries, blueberries, or blackberries)
  • 3 tablespoons granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  1. Chill your mixing bowl and beaters in the fridge for about 10 minutes.
  2. In a saucepan over medium heat, combine the berries, 2 tablespoons of sugar, and lemon juice. Cook for 5–7 minutes until the fruit breaks down. Let it cool.
  3. In the chilled bowl, whip the cream with the remaining 1 tablespoon of sugar and vanilla until soft peaks form.
  4. Gently fold the cooled berry mixture into the whipped cream, creating pretty swirls.
  5. Spoon into serving glasses and chill for 30 minutes or serve immediately.

Notes

  • Use a mix of berries for the best flavor and color.
  • Don’t overwhip the cream—stop at soft peaks for the lightest texture.
  • Make ahead and chill for up to 4 hours for even better flavor.
