  • 3 cups sliced fresh peaches (about 4 to 5 medium peaches)
  • 2 cups fresh blueberries
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 large egg (beaten, for egg wash)
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl, gently toss peaches, blueberries, sugar, cornstarch, lemon juice, vanilla extract, cinnamon, and salt until evenly coated.
  3. Roll out one pie crust disc and press it into a 9-inch pie dish, fitting it snugly into the bottom and sides.
  4. Pour the fruit filling evenly into the prepared crust.
  5. Roll out the second crust disc and cut into strips. Weave the strips into a lattice pattern over the filling. Trim and crimp the edges.
  6. Brush the lattice and edges with beaten egg and sprinkle with coarse sugar if using.
  7. Bake at 400 degrees F for 20 minutes, then reduce heat to 375 degrees F and bake for 35 to 40 minutes until the crust is golden and the filling is bubbling.
  8. If edges brown too quickly, loosely cover with foil.
  9. Remove from oven and cool completely on a rack for at least 3 hours before slicing.
