- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon fresh lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 large egg (beaten, for egg wash)
- 1 tablespoon coarse sugar (optional, for topping)
Instructions
- Preheat oven to 400 degrees F.
- In a large bowl, gently toss peaches, blueberries, sugar, cornstarch, lemon juice, vanilla extract, cinnamon, and salt until evenly coated.
- Roll out one pie crust disc and press it into a 9-inch pie dish, fitting it snugly into the bottom and sides.
- Pour the fruit filling evenly into the prepared crust.
- Roll out the second crust disc and cut into strips. Weave the strips into a lattice pattern over the filling. Trim and crimp the edges.
- Brush the lattice and edges with beaten egg and sprinkle with coarse sugar if using.
- Bake at 400 degrees F for 20 minutes, then reduce heat to 375 degrees F and bake for 35 to 40 minutes until the crust is golden and the filling is bubbling.
- If edges brown too quickly, loosely cover with foil.
- Remove from oven and cool completely on a rack for at least 3 hours before slicing.
