  • 1 large apple, peeled and diced
  • 8 oz sausage (pork or chicken), sliced
  • 1 medium yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon fresh thyme, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable broth or apple cider (optional)

Instructions

  1. Heat a large cast iron skillet over medium heat.
  2. Drizzle in the olive oil and cook the sausage slices until browned, about 5–7 minutes. Remove and set aside.
  3. In the same skillet, add butter and onions. Sauté until caramelized, about 5 minutes.
  4. Add apple cubes and cook for 3–4 minutes. Return sausage to the skillet. Stir in the bread, thyme, salt, and pepper.
  5. Let the hash cook, pressing down slightly so the bread browns on the bottom. Stir occasionally for about 6–8 minutes.
  6. If dry, splash in broth or cider. Taste and adjust seasoning.
  7. Spoon into bowls and top with fresh herbs or a fried egg if desired.
