- 1 large apple, peeled and diced
- 8 oz sausage (pork or chicken), sliced
- 1 medium yellow onion, thinly sliced
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon fresh thyme, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable broth or apple cider (optional)
Instructions
- Heat a large cast iron skillet over medium heat.
- Drizzle in the olive oil and cook the sausage slices until browned, about 5–7 minutes. Remove and set aside.
- In the same skillet, add butter and onions. Sauté until caramelized, about 5 minutes.
- Add apple cubes and cook for 3–4 minutes. Return sausage to the skillet. Stir in the bread, thyme, salt, and pepper.
- Let the hash cook, pressing down slightly so the bread browns on the bottom. Stir occasionally for about 6–8 minutes.
- If dry, splash in broth or cider. Taste and adjust seasoning.
- Spoon into bowls and top with fresh herbs or a fried egg if desired.
