  • Total Time: 1 hour 38 minutes
  • Yield: 8 buns 1x
  • Diet: Vegetarian

Description

Soft, buttery brioche burger buns that bake up golden and fluffy, perfect for transforming simple leftovers into irresistible sandwiches.

Ingredients

Scale
  • 3 ½ cups (420 grams) all purpose flour
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 3 tablespoons granulated sugar
  • 1 teaspoon salt
  • ¾ cup (180 ml) warm milk
  • 2 large eggs
  • 1 large egg (for egg wash)
  • ½ cup (115 grams) unsalted butter, softened
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine warm milk, active dry yeast, and sugar. Let sit for 5 minutes until foamy.
  3. Add flour, salt, eggs, and softened butter. Knead for 8 to 10 minutes until the dough is smooth and elastic.
  4. Transfer dough to a lightly greased bowl, cover, and let rise for 1 to 1 ½ hours until doubled in size.
  5. Divide the dough into 8 equal portions, shape into smooth balls, and place on the prepared baking sheet. Cover and let rise again for 30 to 45 minutes.
  6. Brush tops with beaten egg wash and sprinkle with sesame seeds if using.
  7. Bake for 15 to 18 minutes until golden brown.
  8. Cool slightly on a wire rack before slicing and filling with your favorite leftovers.

Notes

  • Ensure milk is warm, not hot, to avoid killing the yeast.
  • For accurate results, measure flour using a kitchen scale.
  • Buns can be frozen once cooled and reheated gently before serving.
