  • 2 tablespoons olive oil
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup shredded carrots
  • 1 cup cooked chickpeas, drained
  • 1/4 cup tahini
  • 2 tablespoons fresh lemon juice
  • 1 small garlic clove, minced
  • 2 to 4 tablespoons warm water

Instructions

  1. Preheat oven to 425°F.
  2. Toss broccoli florets with olive oil, 1/2 teaspoon salt, and black pepper until evenly coated.
  3. Spread broccoli in a single layer on a baking sheet.
  4. Rinse quinoa under cold water. In a saucepan, combine quinoa, water, and remaining 1/2 teaspoon salt. Bring to a boil, reduce to a simmer, cover, and cook for 15 minutes until water is absorbed. Let rest 5 minutes and fluff with a fork.
  5. Roast broccoli for 20 to 25 minutes until tender and lightly crisp at the edges.
  6. In a small bowl, whisk together tahini, lemon juice, minced garlic, and 2 tablespoons warm water. Add more water as needed until smooth and pourable.
  7. To assemble, divide quinoa into 4 bowls. Top with roasted broccoli, chickpeas, cherry tomatoes, cucumber, shredded carrots, and sliced avocado.
  8. Drizzle with tahini dressing and serve immediately.

  • Toast quinoa briefly in the saucepan before adding water for extra nutty flavor.
