Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a large bowl, whisk together melted butter and granulated sugar until combined. Add eggs one at a time, mixing well after each, then stir in vanilla extract.
- Sift in all-purpose flour, unsweetened cocoa powder, and salt. Fold the dry ingredients into the wet just until combined, avoiding overmixing to keep the brownie layer fudgy.
- Pour about two-thirds of the brownie batter into the prepared pan and spread into an even layer.
- In a separate bowl, beat softened cream cheese with powdered sugar until smooth and creamy. Spoon dollops of the cream cheese mixture evenly over the brownie layer.
- Drop spoonfuls of the remaining brownie batter over the cream cheese dollops. Drizzle caramel sauce over the top in several places.
- Use a knife to gently swirl the brownie, cheesecake, and caramel layers to create a marbled effect, taking care not to fully blend them.
- Bake for 35 to 40 minutes, or until the edges are set and the center is slightly soft but not liquid. A toothpick inserted near the center may show a few moist crumbs.
- Cool completely in the pan on a wire rack, then refrigerate for at least 2 hours to firm up the cheesecake layer.
- Lift the dessert from the pan using the parchment overhang, slice into 9 squares, and serve chilled or at room temperature with an extra drizzle of caramel if desired.
