  • 2 balls burrata cheese, about 8 ounces each
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, freshly ground
  • 1/4 cup pesto
  • 1/4 cup fresh basil leaves, whole

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a bowl, toss halved cherry tomatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, and black pepper until evenly coated.
  3. Line a baking sheet with parchment paper and spread the tomatoes in a single layer.
  4. Roast for 15 minutes until tomatoes are soft and slightly blistered.
  5. Place burrata on a serving platter and spoon roasted tomatoes around it.
  6. Drizzle remaining 1 tablespoon olive oil and pesto over the burrata and tomatoes.
  7. Sprinkle remaining 1/2 teaspoon salt on top and scatter fresh basil leaves over the dish.
  8. Slice into the burrata just before serving and enjoy.
