- 2 balls burrata cheese, about 8 ounces each
- 2 cups cherry tomatoes, halved
- 2 tablespoons olive oil, divided
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, freshly ground
- 1/4 cup pesto
- 1/4 cup fresh basil leaves, whole
Instructions
- Preheat oven to 400 degrees F.
- In a bowl, toss halved cherry tomatoes with 1 tablespoon olive oil, 1/2 teaspoon salt, and black pepper until evenly coated.
- Line a baking sheet with parchment paper and spread the tomatoes in a single layer.
- Roast for 15 minutes until tomatoes are soft and slightly blistered.
- Place burrata on a serving platter and spoon roasted tomatoes around it.
- Drizzle remaining 1 tablespoon olive oil and pesto over the burrata and tomatoes.
- Sprinkle remaining 1/2 teaspoon salt on top and scatter fresh basil leaves over the dish.
- Slice into the burrata just before serving and enjoy.
