Ingredients

  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon anchovy paste
  • 2 teaspoons Dijon mustard
  • 3 tablespoons fresh lemon juice
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup Greek yogurt
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 2 tablespoons chopped fresh parsley
  • Optional: toasted sourdough bread for serving

Instructions

  1. Warm a large skillet over medium heat and add olive oil.
  2. In a mixing bowl, whisk together garlic, anchovy paste, Dijon mustard, lemon juice, Greek yogurt, Parmesan, salt, and pepper until smooth.
  3. Add minced garlic to the skillet and sauté for 30 seconds until fragrant. Pour in the Caesar dressing mixture and stir to warm through.
  4. Add the beans to the skillet and gently fold them into the dressing.
  5. Simmer for 5–7 minutes on low heat, stirring occasionally, allowing beans to absorb the flavors.
  6. Stir in fresh parsley and adjust seasoning if needed.
  7. Serve warm with toasted sourdough or your favorite side.
