- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 tablespoon anchovy paste
- 2 teaspoons Dijon mustard
- 3 tablespoons fresh lemon juice
- 1/3 cup grated Parmesan cheese
- 1/4 cup Greek yogurt
- 1/2 teaspoon salt
- 1/2 teaspoon freshly cracked black pepper
- 2 tablespoons chopped fresh parsley
- Optional: toasted sourdough bread for serving
Instructions
- Warm a large skillet over medium heat and add olive oil.
- In a mixing bowl, whisk together garlic, anchovy paste, Dijon mustard, lemon juice, Greek yogurt, Parmesan, salt, and pepper until smooth.
- Add minced garlic to the skillet and sauté for 30 seconds until fragrant. Pour in the Caesar dressing mixture and stir to warm through.
- Add the beans to the skillet and gently fold them into the dressing.
- Simmer for 5–7 minutes on low heat, stirring occasionally, allowing beans to absorb the flavors.
- Stir in fresh parsley and adjust seasoning if needed.
- Serve warm with toasted sourdough or your favorite side.
