			- 2 medium sweet potatoes, sliced into 1/2-inch rounds
 - 1 pound large shrimp, peeled and deveined
 - 2 tablespoons olive oil
 - 1 ½ tablespoons Cajun seasoning
 - ½ teaspoon garlic powder
 - ½ teaspoon paprika
 - ¼ teaspoon salt
 - ¼ teaspoon black pepper
 - 1 tablespoon fresh parsley, chopped
 - Lemon wedges, for serving
 
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
 - Toss shrimp in a bowl with olive oil, Cajun seasoning, garlic powder, paprika, salt, and black pepper until evenly coated.
 - Arrange sweet potato rounds on the baking sheet, drizzle with olive oil, and season lightly with salt and pepper.
 - Roast the sweet potatoes for 20 minutes, flipping halfway through.
 - Add the shrimp to the same baking sheet during the last 8 minutes of roasting.
 - Once shrimp are pink and sweet potatoes are caramelized on the edges, remove from the oven.
 - Top each sweet potato round with a shrimp, garnish with parsley, and serve with lemon wedges.
