  • 2 medium sweet potatoes, sliced into 1/2-inch rounds
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 ½ tablespoons Cajun seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss shrimp in a bowl with olive oil, Cajun seasoning, garlic powder, paprika, salt, and black pepper until evenly coated.
  3. Arrange sweet potato rounds on the baking sheet, drizzle with olive oil, and season lightly with salt and pepper.
  4. Roast the sweet potatoes for 20 minutes, flipping halfway through.
  5. Add the shrimp to the same baking sheet during the last 8 minutes of roasting.
  6. Once shrimp are pink and sweet potatoes are caramelized on the edges, remove from the oven.
  7. Top each sweet potato round with a shrimp, garnish with parsley, and serve with lemon wedges.
