Description

Traditional Caldo Verde made with creamy potatoes, tender kale, and smoky sausage in a comforting golden broth.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 pounds Yukon Gold potatoes, peeled and diced
  • 6 cups chicken broth
  • 1 large bunch kale, stems removed and thinly sliced
  • 12 ounces smoked sausage, sliced into rounds
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion for 4 to 5 minutes, then add garlic.
  3. Add potatoes and broth. Bring to a boil, then simmer 15 to 20 minutes.
  4. Blend until smooth and creamy.
  5. Add sausage and simmer 5 minutes.
  6. Stir in kale and cook 5 minutes until tender.
  7. Season and serve warm.

Notes

  • Slice kale very thin for best texture.
  • Blend carefully while hot.
  • Adjust seasoning at the end.
