Traditional Caldo Verde made with creamy potatoes, tender kale, and smoky sausage in a comforting golden broth.
Ingredients

- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 pounds Yukon Gold potatoes, peeled and diced
- 6 cups chicken broth
- 1 large bunch kale, stems removed and thinly sliced
- 12 ounces smoked sausage, sliced into rounds
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion for 4 to 5 minutes, then add garlic.
- Add potatoes and broth. Bring to a boil, then simmer 15 to 20 minutes.
- Blend until smooth and creamy.
- Add sausage and simmer 5 minutes.
- Stir in kale and cook 5 minutes until tender.
- Season and serve warm.
Notes
- Slice kale very thin for best texture.
- Blend carefully while hot.
- Adjust seasoning at the end.
- Freezes well.
