  • 1 pound pizza dough
  • 1 tablespoon olive oil
  • 2 large eggs
  • ¾ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 4 ounces pancetta, diced and cooked until crisp
  • 1 teaspoon freshly cracked black pepper
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating.
  2. In a bowl, whisk together 1 egg and the grated Parmesan cheese until smooth.
  3. Roll out the pizza dough on a lightly floured surface and transfer it to a baking sheet or preheated pizza stone. Brush the surface lightly with olive oil.
  4. Spread the egg and Parmesan mixture thinly over the dough. Sprinkle the shredded mozzarella evenly on top, then scatter the cooked pancetta over the cheese.
  5. Bake for 10 to 12 minutes, or until the crust is golden and the cheese is bubbling.
  6. Remove the pizza from the oven and carefully crack the remaining egg over the hot pizza. Return it to the oven for 1 to 2 minutes, until the egg white is just set but the yolk remains soft.
  7. Sprinkle with freshly cracked black pepper and a pinch of salt before slicing and serving.
