  • 1 pound (450 grams) carrots, peeled and sliced
  • 6 ounces (170 grams) chorizo sausage, diced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups (1 liter) vegetable broth
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt, or to taste
  • 0.25 teaspoon freshly ground black pepper
  • 0.5 cup (120 milliliters) heavy cream (optional)
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat a large soup pot over medium heat.
  2. Add olive oil and sauté the diced chorizo until lightly browned and fragrant. Remove and set aside, leaving the oils in the pot.
  3. Add chopped onion to the same pot and cook for about 5 minutes until softened. Stir in minced garlic and cook for 1 additional minute.
  4. Add sliced carrots and pour in the vegetable broth. Return the cooked chorizo to the pot.
  5. Bring to a gentle boil, then reduce heat and simmer for 20 minutes until the carrots are tender.
  6. Blend the soup to your desired consistency using an immersion blender or countertop blender.
  7. Stir in heavy cream if using, then season with salt and black pepper to taste.
  8. Ladle into bowls, garnish with fresh parsley, and serve warm.

Notes

  • For deeper flavor, add a pinch of smoked paprika while sautéing the chorizo.
  • If the soup thickens too much when reheating, add a splash of broth to loosen it.
  • You can partially blend the soup if you prefer some texture.
