- 1 pound (450 grams) carrots, peeled and sliced
- 6 ounces (170 grams) chorizo sausage, diced
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 4 cups (1 liter) vegetable broth
- 1 tablespoon olive oil
- 0.5 teaspoon salt, or to taste
- 0.25 teaspoon freshly ground black pepper
- 0.5 cup (120 milliliters) heavy cream (optional)
- 1 tablespoon fresh parsley, chopped
Instructions
- Heat a large soup pot over medium heat.
- Add olive oil and sauté the diced chorizo until lightly browned and fragrant. Remove and set aside, leaving the oils in the pot.
- Add chopped onion to the same pot and cook for about 5 minutes until softened. Stir in minced garlic and cook for 1 additional minute.
- Add sliced carrots and pour in the vegetable broth. Return the cooked chorizo to the pot.
- Bring to a gentle boil, then reduce heat and simmer for 20 minutes until the carrots are tender.
- Blend the soup to your desired consistency using an immersion blender or countertop blender.
- Stir in heavy cream if using, then season with salt and black pepper to taste.
- Ladle into bowls, garnish with fresh parsley, and serve warm.
Notes
- For deeper flavor, add a pinch of smoked paprika while sautéing the chorizo.
- If the soup thickens too much when reheating, add a splash of broth to loosen it.
- You can partially blend the soup if you prefer some texture.
