Description
These carrot cake oatmeal cookies are soft, chewy, and loaded with grated carrots, hearty oats, and warm spices. Finished with a sweet cream cheese glaze, they deliver all the comfort of carrot cake in cookie form.

- 1 cup all-purpose flour
- 1 cup old-fashioned rolled oats
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup finely grated carrots
- 1/3 cup chopped walnuts (optional)
- 1/3 cup raisins (optional)
- 2 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1–2 tablespoons milk
- 1/4 teaspoon vanilla extract (for glaze)
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, oats, baking soda, cinnamon, and salt.
- In another bowl, cream butter with brown and granulated sugar until fluffy. Add egg and vanilla, mix well.
- Stir dry ingredients into wet ingredients until just combined.
- Fold in grated carrots, and add walnuts and raisins if using.
- Scoop tablespoon-sized dough balls onto baking sheet, spaced 2 inches apart.
- Bake for 10–12 minutes or until edges are golden. Cool on sheet for a few minutes, then transfer to a rack.
- Whisk cream cheese, powdered sugar, milk, and vanilla for glaze. Drizzle over cooled cookies.
- Let glaze set slightly before serving.
Notes
- Use freshly grated carrots for the best texture and moisture.
- Chill the dough for thicker, puffier cookies.
- Adjust glaze consistency by adding more or less milk.
- Store cookies in an airtight container for up to 5 days.
