Description

These carrot cake oatmeal cookies are soft, chewy, and loaded with grated carrots, hearty oats, and warm spices. Finished with a sweet cream cheese glaze, they deliver all the comfort of carrot cake in cookie form.

  • 1/2 cup unsalted butter, softened

  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup finely grated carrots
  • 1/3 cup chopped walnuts (optional)
  • 1/3 cup raisins (optional)
  • 2 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 12 tablespoons milk
  • 1/4 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, oats, baking soda, cinnamon, and salt.
  3. In another bowl, cream butter with brown and granulated sugar until fluffy. Add egg and vanilla, mix well.
  4. Stir dry ingredients into wet ingredients until just combined.
  5. Fold in grated carrots, and add walnuts and raisins if using.
  6. Scoop tablespoon-sized dough balls onto baking sheet, spaced 2 inches apart.
  7. Bake for 10–12 minutes or until edges are golden. Cool on sheet for a few minutes, then transfer to a rack.
  8. Whisk cream cheese, powdered sugar, milk, and vanilla for glaze. Drizzle over cooled cookies.
  9. Let glaze set slightly before serving.

  • Chill the dough for thicker, puffier cookies.
