Ingredients

  • 2 cups Raw or Roasted Cashews
  • 12 teaspoons Neutral Oil (optional)
  • 1/4 teaspoon Salt (optional)
  • 1 teaspoon Maple Syrup or Honey (optional)
  • 1/2 teaspoon Vanilla Extract (optional)

Instructions

  1. Preheat oven to 350°F if using raw cashews. Spread them on a tray and roast for 10–12 minutes until lightly golden. Let cool.
  2. Place the cashews into a food processor along with salt, sweetener, or vanilla if using.
  3. Start blending. Scrape down sides regularly. Continue blending until the butter becomes smooth and glossy.
  4. Add a teaspoon of oil only if the mixture is too thick or dry, and blend again.
  5. Let the cashew butter cool completely before transferring it to a jar.
  6. Store in the fridge and use as needed.
