- 1 large head cauliflower, cut into bite-sized florets
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 cups milk
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cloves garlic, minced
- 1/8 teaspoon nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- Bring a large pot of salted water to a boil. Add cauliflower florets and blanch for 3 to 4 minutes, then drain thoroughly.
- In a saucepan, melt butter over medium heat. Add flour and whisk for 1 to 2 minutes to form a roux.
- Gradually whisk in milk, stirring continuously until the mixture thickens and becomes smooth.
- Add minced garlic, nutmeg, salt, and black pepper. Stir in shredded cheddar cheese until fully melted and creamy.
- Arrange the blanched cauliflower in the prepared baking dish and pour the cheese sauce evenly over the top.
- Sprinkle grated Parmesan cheese over the surface.
- Bake for 25 to 30 minutes until bubbly and golden brown.
- Allow the dish to rest for 5 minutes before serving warm.

- Do not overcook the cauliflower during blanching to maintain its texture.
