Description

A delicious low-carb alternative to traditional garlic bread, made with riced cauliflower, melted cheese, and aromatic garlic for a crispy, flavorful bite.


Ingredients

  • 1 large head cauliflower, riced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Rice the cauliflower and steam or microwave for 5 minutes. Allow it to cool, then squeeze out as much moisture as possible using a clean towel.
  3. Transfer the drained cauliflower to a mixing bowl and combine with mozzarella, Parmesan, egg, minced garlic, salt, and black pepper. Mix thoroughly.
  4. Spread the mixture evenly onto the prepared baking sheet, shaping it into a rectangular loaf about 1/2 inch thick.
  5. Bake for 20 minutes or until golden and firm.
  6. Brush lightly with olive oil, sprinkle with fresh parsley, and bake for an additional 5 minutes.
  7. Allow to cool slightly before slicing and serving warm.
