  • 1 large head cauliflower (about 700 grams), cut into bite sized florets
  • 3 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large pitta breads
  • 1 cup shredded lettuce
  • 2 medium tomatoes, sliced
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 2 to 3 tablespoons water

Instructions

  1. Preheat oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper if desired.
  2. In a large mixing bowl, toss the cauliflower florets with olive oil, cumin, paprika, coriander, garlic powder, salt, and black pepper until evenly coated.
  3. Spread the cauliflower in a single layer on the prepared baking sheet.
  4. Roast for 25 to 30 minutes, flipping halfway through, until golden and tender.
  5. In a small bowl, whisk together tahini, lemon juice, and 2 to 3 tablespoons water until smooth and creamy.
  6. Warm the pitta breads slightly before assembling.
  7. Fill each pitta with roasted cauliflower, shredded lettuce, sliced tomatoes, and drizzle generously with tahini sauce. Serve immediately.

  • Do not overcrowd the baking sheet to ensure proper roasting.
