  • 3 cups cooked jasmine rice, preferably day old
  • 1 1/2 cups fresh pineapple chunks
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup green peas
  • 1/2 cup diced carrots
  • 1/2 cup diced red bell pepper
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 2 tablespoons chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 375 F.
  2. In a bowl, mix cooked rice with soy sauce, salt, and black pepper until evenly coated.
  3. Heat vegetable oil in a large skillet over medium heat. Sauté garlic, carrots, bell pepper, and peas for 3 to 4 minutes until slightly tender.
  4. Add the seasoned rice to the skillet and stir gently. Fold in pineapple chunks and half of the shredded mozzarella cheese.
  5. Transfer the mixture into a baking dish or prepared pineapple shell and spread evenly.
  6. Sprinkle the remaining mozzarella cheese over the top.
  7. Bake for 20 minutes, or until the cheese is melted and lightly golden.
  8. Remove from oven, let rest for 5 minutes, then garnish with chopped green onions and serve warm.

  • Drain pineapple well if using canned to prevent excess moisture.
