  • 2 ¼ teaspoons active dry yeast
  • 1 ½ cups warm water
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1 ½ cups shredded cheddar cheese (or mozzarella)
  • ½ cup baking soda
  • 1 egg, beaten
  • Coarse salt for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
  3. Add melted butter, salt, and flour. Knead until smooth, about 7 minutes.
  4. Bring a large pot of water to a boil and stir in the baking soda.
  5. Divide dough into 8 pieces, roll into ropes, flatten slightly, and add shredded cheese. Pinch edges to seal, then shape into pretzels.
  6. Dip each pretzel into the boiling water for 30 seconds, then place on the baking sheet.
  7. Brush with beaten egg, sprinkle with coarse salt, and bake for 12–15 minutes until golden brown.
