 - 2 ¼ teaspoons active dry yeast
 - 1 ½ cups warm water
 - 2 tablespoons sugar
 - 1 teaspoon salt
 - 2 tablespoons unsalted butter, melted
 - 1 ½ cups shredded cheddar cheese (or mozzarella)
 - ½ cup baking soda
 - 1 egg, beaten
 - Coarse salt for sprinkling
 
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
 - In a bowl, mix warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
 - Add melted butter, salt, and flour. Knead until smooth, about 7 minutes.
 - Bring a large pot of water to a boil and stir in the baking soda.
 - Divide dough into 8 pieces, roll into ropes, flatten slightly, and add shredded cheese. Pinch edges to seal, then shape into pretzels.
 - Dip each pretzel into the boiling water for 30 seconds, then place on the baking sheet.
 - Brush with beaten egg, sprinkle with coarse salt, and bake for 12–15 minutes until golden brown.
 - Serve warm and enjoy the cheesy goodness!
