  • 8 ounces dried flat rice noodles, softened and drained
  • 12 ounces beef sirloin, thinly sliced
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh bean sprouts
  • 3 green onions, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Place a large skillet or wok over medium high heat until hot.
  2. In a small bowl, mix soy sauce and oyster sauce, then set aside.
  3. Add vegetable oil to the hot skillet and sauté minced garlic until fragrant.
  4. Add thinly sliced beef and cook quickly until just browned.
  5. Toss in softened rice noodles and pour the sauce mixture over them. Stir well to coat evenly.
  6. Stir fry for 3 to 4 minutes until noodles are heated through and slightly crisp at the edges.
  7. Fold in bean sprouts and half of the chopped green onions.
  8. Sprinkle shredded mozzarella evenly over the top and cover the skillet briefly until melted.
  9. Remove from heat, garnish with remaining green onions and black pepper, then serve immediately.

  • Use high heat to achieve lightly crisp noodles without overcooking them.
  • Slice the beef very thinly so it remains tender and cooks quickly.
  • Add the cheese at the end to prevent it from becoming oily.
