- 1 package (16 oz) phyllo dough, thawed
- 1 cup feta cheese, crumbled
- 1 cup ricotta cheese
- 1 large egg
- 2 tablespoons fresh parsley, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup melted butter
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, combine feta, ricotta, egg, parsley, salt, and pepper. Mix well.
- Unroll the phyllo dough and keep it covered with a damp towel. Melt the butter and keep a pastry brush nearby.
- Cut phyllo into 3-inch-wide strips. Layer two strips together, brushing each with butter.
- Place a spoonful of cheese mixture at the end of the strip and fold into triangles like a flag.
- Repeat with remaining dough and filling. Arrange triangles on the baking sheet.
- Brush tops with melted butter and bake for 20–25 minutes until golden brown.
- Let cool slightly before serving.
Notes
- Keep phyllo dough covered with a damp towel to prevent drying out.
- Freeze unbaked triangles and bake directly from frozen when needed.
- For added flavor, mix in chopped spinach or a pinch of chili flakes.
