Crispy, golden quesadillas filled with creamy mashed potatoes and gooey melted cheddar, served with a smoky, spicy chipotle mayo that takes every bite to the next level.

- 4 large flour tortillas
- 2 cups mashed potatoes
- 1½ cups shredded cheddar cheese
- 2 chipotle peppers in adobo sauce, finely chopped
- ½ cup mayonnaise
- 1 tablespoon lime juice
- ½ teaspoon garlic powder
- Salt and pepper, to taste
- 1 tablespoon butter or oil (per quesadilla)
Instructions
- Heat a nonstick or cast iron skillet over medium heat.
- In a small bowl, mix mayonnaise, chopped chipotle peppers, lime juice, garlic powder, salt, and pepper. Set aside.
- Spread mashed potatoes on half of each tortilla and sprinkle with cheddar cheese. Fold over into a half-moon shape.
- Grease the skillet lightly with butter or oil. Place the folded quesadillas in the skillet.
- Cook each side for 3–4 minutes or until golden brown and cheese is melted.
- Let rest for 1 minute, then slice into wedges.
- Serve warm with chipotle mayo for dipping.
Notes
- Use room temperature mashed potatoes for easier spreading.
- Do not overfill to avoid soggy tortillas.
- Homemade chipotle mayo adds the best flavor but store-bought works too.
