- 2 tablespoons fresh lemon juice

Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, and salt.
- In a separate bowl, cream softened butter and 1 1/4 cups of granulated sugar until light and fluffy.
- Beat in eggs, lemon zest, lemon juice, and vanilla extract until combined.
- Gradually mix the dry ingredients into the wet ingredients just until combined.
- Place the remaining 1/4 cup granulated sugar in a small bowl.
- Scoop tablespoon sized portions of dough, roll into balls, and coat each ball in sugar.
- Arrange dough balls 2 inches apart on prepared baking sheets.
- Bake for 9 to 11 minutes until edges are lightly golden but centers remain soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For thicker cookies, chill the dough for 30 minutes before baking.
