- 4 boneless skinless chicken pieces, about 170 grams each, pounded thin
- 4 slices Swiss cheese, about 20 grams each
- 4 thin slices deli ham, about 15 grams each
- 1 teaspoon salt
- 1 teaspoon black pepper
- 60 grams all purpose flour
- 2 large eggs, beaten
- 120 grams breadcrumbs
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 tablespoons all purpose flour (for sauce)
- 240 milliliters milk
- 1 tablespoon Dijon mustard
Instructions
- Preheat oven to 190 degrees Celsius and lightly grease a baking dish.
- Season the flattened chicken with salt and black pepper on both sides.
- Place one slice of ham and one slice of Swiss cheese on each piece of chicken. Roll tightly and secure with toothpicks.
- Dredge each roll in flour, dip into beaten eggs, then coat evenly with breadcrumbs.
- Heat olive oil in a skillet over medium heat and lightly brown each roll on all sides.
- Transfer the rolls to the prepared baking dish and bake for 20 to 25 minutes, until the internal temperature reaches 75 degrees Celsius.
- In a saucepan, melt butter over medium heat. Stir in flour and cook briefly, then gradually whisk in milk until smooth and thickened.
- Stir in Dijon mustard and cook for another minute until combined.
- Remove toothpicks from the chicken, slice if desired, spoon sauce over the top, and serve warm.

- Chill the rolled chicken for 15 minutes before breading to help maintain shape.
