Description

  • 4 boneless skinless chicken pieces, about 170 grams each, pounded thin
  • 4 slices Swiss cheese, about 20 grams each
  • 4 thin slices deli ham, about 15 grams each
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 60 grams all purpose flour
  • 2 large eggs, beaten
  • 120 grams breadcrumbs
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour (for sauce)
  • 240 milliliters milk
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat oven to 190 degrees Celsius and lightly grease a baking dish.
  2. Season the flattened chicken with salt and black pepper on both sides.
  3. Place one slice of ham and one slice of Swiss cheese on each piece of chicken. Roll tightly and secure with toothpicks.
  4. Dredge each roll in flour, dip into beaten eggs, then coat evenly with breadcrumbs.
  5. Heat olive oil in a skillet over medium heat and lightly brown each roll on all sides.
  6. Transfer the rolls to the prepared baking dish and bake for 20 to 25 minutes, until the internal temperature reaches 75 degrees Celsius.
  7. In a saucepan, melt butter over medium heat. Stir in flour and cook briefly, then gradually whisk in milk until smooth and thickened.
  8. Stir in Dijon mustard and cook for another minute until combined.
  9. Remove toothpicks from the chicken, slice if desired, spoon sauce over the top, and serve warm.
