Description

Ingredients

  • pounds boneless skinless chicken breasts, thinly sliced
  • 1 red bell pepper, sliced thin
  • 1 green bell pepper, sliced thin
  • 1 yellow bell pepper, sliced thin
  • 1 large onion, sliced thin
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 3 garlic cloves, minced
  • 1½ teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 8 small flour tortillas

Instructions

  1. In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper. Add the chicken strips and toss to coat. Marinate for at least 30 minutes.
  2. Heat a cast iron skillet over medium-high heat. Add the marinated chicken and cook for 5–6 minutes until golden and cooked through. Remove and set aside.
  3. In the same skillet, add sliced onions and peppers. Cook for 4–5 minutes until tender-crisp.
  4. Return the chicken to the skillet and toss everything together for another minute.
  5. Squeeze fresh lime over the top and sprinkle with chopped cilantro if desired.
  6. Serve immediately with warm tortillas and your favorite toppings.

  • For extra flavor, marinate the chicken overnight.
  • Warm tortillas before serving to keep them soft.
