- 1½ pounds boneless skinless chicken breasts, thinly sliced
- 1 red bell pepper, sliced thin
- 1 green bell pepper, sliced thin
- 1 yellow bell pepper, sliced thin
- 1 large onion, sliced thin
- 3 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 3 garlic cloves, minced
- 1½ teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 8 small flour tortillas
Instructions
- In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper. Add the chicken strips and toss to coat. Marinate for at least 30 minutes.
- Heat a cast iron skillet over medium-high heat. Add the marinated chicken and cook for 5–6 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, add sliced onions and peppers. Cook for 4–5 minutes until tender-crisp.
- Return the chicken to the skillet and toss everything together for another minute.
- Squeeze fresh lime over the top and sprinkle with chopped cilantro if desired.
- Serve immediately with warm tortillas and your favorite toppings.
Notes
- For extra flavor, marinate the chicken overnight.
- Warm tortillas before serving to keep them soft.
- Use corn tortillas for a gluten-free version.
