- 400 g chicken thigh fillets
- 200 g halloumi cheese
- 1 large ripe mango, peeled and diced
- 120 g mixed salad greens
- 1 medium cucumber, sliced
- 1 small red onion, thinly sliced
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Heat a grill pan or skillet over medium heat until hot.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper.
- Lightly brush the pan with olive oil.
- Grill the chicken for 5 to 6 minutes per side until fully cooked, then grill the halloumi until golden on both sides.
- Slice the grilled chicken and halloumi into bite-sized pieces.
- In a large bowl, toss the salad greens, cucumber, red onion, and mango with half of the dressing.
- Top with the warm chicken and halloumi, drizzle with remaining dressing, and serve immediately.
Notes
- For best texture, grill the halloumi just before assembling.
- Use ripe but firm mango for clean cuts and balanced sweetness.
