- 1 medium yellow onion, diced
- 3 large carrots, peeled and sliced
- 3 celery stalks, sliced
- 3 garlic cloves, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- 1½ teaspoons salt
- ½ teaspoon black pepper
- 10 cups chicken broth
- 3 cups cooked chicken, shredded
- 6 ounces egg noodles
- ¼ cup fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Place a large pot over medium heat and warm the olive oil.
- Add diced onions, carrots, and celery. Sauté for 6 to 8 minutes until softened.
- Stir in garlic, bay leaf, thyme, salt, and pepper. Cook until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Add shredded chicken and let it simmer for 15 minutes to blend flavors.
- Stir in egg noodles and cook for 6 to 8 minutes until tender.
- Remove from heat. Discard the bay leaf and stir in chopped parsley and lemon juice.
- Serve hot with optional garnish of extra herbs or crusty bread.
Notes
- Use low-sodium broth to better control seasoning.
- For extra richness, add a parmesan rind while simmering.
- If making ahead, store noodles separately to prevent them from getting soggy.
- Add a pinch of red pepper flakes for a spicy twist.
