Description

  • 1 medium yellow onion, diced
  • 3 large carrots, peeled and sliced
  • 3 celery stalks, sliced

  • 1 teaspoon dried thyme
  • 1½ teaspoons salt
  • ½ teaspoon black pepper
  • 10 cups chicken broth
  • 3 cups cooked chicken, shredded
  • 6 ounces egg noodles
  • ¼ cup fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Place a large pot over medium heat and warm the olive oil.
  2. Add diced onions, carrots, and celery. Sauté for 6 to 8 minutes until softened.
  3. Stir in garlic, bay leaf, thyme, salt, and pepper. Cook until fragrant.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add shredded chicken and let it simmer for 15 minutes to blend flavors.
  6. Stir in egg noodles and cook for 6 to 8 minutes until tender.
  7. Remove from heat. Discard the bay leaf and stir in chopped parsley and lemon juice.
  8. Serve hot with optional garnish of extra herbs or crusty bread.

  • Use low-sodium broth to better control seasoning.
  • For extra richness, add a parmesan rind while simmering.
