- 1 ½ pounds chicken thighs, boneless and skinless
- 3 tablespoons olive oil
- ½ cup plain yogurt
- 4 garlic cloves, minced
- 3 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon ground paprika
- 1 teaspoon ground coriander
- ½ teaspoon ground turmeric
- ¼ teaspoon ground cinnamon
- 1 teaspoon salt
- ½ teaspoon black pepper
- 4 large flatbreads or pita
- ½ cup garlic sauce or tahini
- Fresh vegetables (cucumbers, tomatoes, onions, lettuce)
Instructions
- Preheat a cast iron skillet or grill pan over medium-high heat.
- In a bowl, whisk together yogurt, olive oil, garlic, lemon juice, and all spices. Add chicken and coat well.
- Lightly oil your skillet to prevent sticking.
- Once marinated, place chicken pieces onto the hot pan.
- Sear 5–7 minutes per side until golden brown and fully cooked.
- Warm the flatbreads, spread garlic sauce, add sliced chicken, and top with fresh vegetables.
- Roll tightly, slice in half if desired, and enjoy warm.
