  • 2 cups broccoli florets
  • 1 large red bell pepper, sliced
  • 1 cup snap peas
  • 2 medium carrots, thinly sliced
  • 3 cloves garlic, minced
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1/3 cup chicken broth
  • 1 teaspoon sesame oil
  • 2 tablespoons olive oil

Instructions

  1. Heat a large skillet or wok over medium high heat until hot.
  2. In a small bowl, whisk together soy sauce, honey, cornstarch, chicken broth, and sesame oil until smooth.
  3. Add 1 tablespoon olive oil to the skillet.
  4. Add sliced chicken in a single layer and cook for 4 to 5 minutes until lightly golden and cooked through. Remove and set aside.
  5. Add remaining olive oil to the skillet. Sauté broccoli, bell pepper, snap peas, carrots, and garlic for 4 to 5 minutes until crisp tender.
  6. Return the cooked chicken to the pan and pour in the prepared sauce. Stir continuously for 2 to 3 minutes until the sauce thickens and evenly coats the chicken and vegetables.
  7. Adjust seasoning if needed and serve immediately.
