Ingredients
- Unsalted butter, 4 tablespoons
- Mini marshmallows, 10 ounces (about 6 cups)
- Rice Krispies cereal, 6 cups
- Dried cherries, chopped, 1 cup
- Semi-sweet chocolate chips, 1 1/2 cups
- Vegetable oil, 1 teaspoon
Instructions
- Line a 9×13 inch pan with parchment paper and lightly grease it to prevent sticking.
- In a large saucepan over low heat, melt the butter, add the mini marshmallows, and stir until completely smooth.
- Remove from heat, add the Rice Krispies and chopped dried cherries, and fold gently until evenly coated.
- Transfer the mixture to the prepared pan and press lightly with a buttered spatula to create an even layer.
- Let the bars cool and set for about 20 minutes at room temperature.
- Melt the semi-sweet chocolate chips with the vegetable oil in a microwave safe bowl using 30 second intervals, stirring between each, until silky smooth, then spread or drizzle over the set bars.
- Allow the chocolate to firm up, lift the slab from the pan, and slice into squares. Serve and enjoy.

- Note: Pat the chopped dried cherries dry with a paper towel to keep the bars from turning soggy.
