- 1 cup boiling water
- 1/2 cup cold water
- 1/2 cup fresh strawberries, sliced
- 1 cup semi sweet chocolate chips
- 1 tablespoon coconut oil
Instructions
- Arrange small dessert cups on a tray.
- In a bowl whisk the strawberry gelatin mix with boiling water until completely dissolved.
- Add the cold water and stir until combined.
- Place sliced strawberries into each dessert cup.
- Pour the gelatin mixture into the cups over the strawberries.
- Refrigerate for about 2 hours until the gelatin becomes firm.
- Melt chocolate chips with coconut oil and stir until smooth.
- Spoon a thin layer of melted chocolate over the set gelatin.
- Refrigerate again briefly until the chocolate topping hardens.
- Serve chilled.
