A rich and elegant chocolate tart filled with silky ganache, topped with ripe pears and crunchy pecans. Perfect for gatherings or a luxurious treat at home.

- 1 1/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered sugar
- 1/2 cup cold unsalted butter, cubed
- 1 large egg yolk
- 3/4 cup heavy cream
- 7 oz dark chocolate (70%), chopped
- 1 tsp vanilla extract
- 2 ripe pears, peeled, cored, and sliced
- 1/3 cup chopped pecans
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9-inch tart pan.
- In a bowl, mix flour, cocoa powder, and powdered sugar. Cut in butter until the mixture resembles coarse crumbs. Mix in egg yolk and a splash of cold water to form a dough.
- Press dough evenly into tart pan and chill for 15 minutes.
- Blind bake crust with parchment and pie weights for 15 minutes. Let cool.
- Heat cream until steaming, remove from heat, and stir in chopped chocolate until smooth. Add vanilla and salt.
- Pour ganache into crust. Arrange pear slices on top and sprinkle with pecans.
- Bake for 15–20 minutes until pears are just tender. Let cool completely.
- Serve at room temperature or chilled. Optional: dust with powdered sugar or sea salt before serving.
Notes
- Use ripe but firm pears to prevent them from turning mushy.
- Toast the pecans beforehand to enhance their flavor.
- Let the tart cool fully before slicing for clean cuts.
