Description

A rich and elegant chocolate tart filled with silky ganache, topped with ripe pears and crunchy pecans. Perfect for gatherings or a luxurious treat at home.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup powdered sugar
  • 1/2 cup cold unsalted butter, cubed
  • 1 large egg yolk
  • 3/4 cup heavy cream
  • 7 oz dark chocolate (70%), chopped
  • 1 tsp vanilla extract
  • 2 ripe pears, peeled, cored, and sliced
  • 1/3 cup chopped pecans
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9-inch tart pan.
  2. In a bowl, mix flour, cocoa powder, and powdered sugar. Cut in butter until the mixture resembles coarse crumbs. Mix in egg yolk and a splash of cold water to form a dough.
  3. Press dough evenly into tart pan and chill for 15 minutes.
  4. Blind bake crust with parchment and pie weights for 15 minutes. Let cool.
  5. Heat cream until steaming, remove from heat, and stir in chopped chocolate until smooth. Add vanilla and salt.
  6. Pour ganache into crust. Arrange pear slices on top and sprinkle with pecans.
  7. Bake for 15–20 minutes until pears are just tender. Let cool completely.
  8. Serve at room temperature or chilled. Optional: dust with powdered sugar or sea salt before serving.

Notes

  • Use ripe but firm pears to prevent them from turning mushy.
  • Toast the pecans beforehand to enhance their flavor.
  • Let the tart cool fully before slicing for clean cuts.
