- 1/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 1/4 cups plant-based milk (almond, soy, or oat)
- 2 tablespoons melted coconut oil
- 1/4 cup vegan chocolate chips (optional)
Instructions
- Preheat your waffle maker and let it heat fully.
- In a bowl, whisk together the buckwheat flour, cocoa powder, baking powder, and salt.
- In a separate bowl, mix the plant milk, melted coconut oil, maple syrup, and vanilla extract.
- Pour the wet mixture into the dry and stir until just combined. Fold in chocolate chips if using.
- Lightly grease the waffle maker with oil or spray.
- Pour enough batter into the waffle maker and spread evenly. Cook for 4–5 minutes or until crisp and cooked through.
- Remove carefully and repeat with remaining batter.
- Serve warm with your favorite toppings.
