Ingredients

  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/4 cups plant-based milk (almond, soy, or oat)
  • 2 tablespoons melted coconut oil
  • 1/4 cup vegan chocolate chips (optional)

Instructions

  1. Preheat your waffle maker and let it heat fully.
  2. In a bowl, whisk together the buckwheat flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, mix the plant milk, melted coconut oil, maple syrup, and vanilla extract.
  4. Pour the wet mixture into the dry and stir until just combined. Fold in chocolate chips if using.
  5. Lightly grease the waffle maker with oil or spray.
  6. Pour enough batter into the waffle maker and spread evenly. Cook for 4–5 minutes or until crisp and cooked through.
  7. Remove carefully and repeat with remaining batter.
  8. Serve warm with your favorite toppings.
