Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, lemon juice, garlic powder, smoked paprika, salt, and pepper. Coat chicken breasts and marinate for at least 30 minutes.

  3. Prepare chutney sauce: In a small bowl, stir together mango chutney, mayonnaise, and Dijon mustard until smooth.
  4. Assemble subs: Spread chutney sauce on the toasted sub rolls. Layer with lettuce, tomato slices, red onion, chicken strips, and cheese if using.

Notes
