- 4 medium sweet potatoes (about 800 g total)
- 250 g chorizo sausage, casing removed
- 180 ml apple cider
- 1 medium yellow onion, finely chopped
- 1 small red bell pepper, diced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 2 tablespoons fresh parsley or chives, chopped
Instructions
- Preheat the oven to 200°C and line a baking sheet with parchment paper.
- Rub the sweet potatoes lightly with olive oil and sprinkle with a pinch of salt.
- Place the sweet potatoes on the baking sheet and roast for 45 to 50 minutes until very tender.
- Heat olive oil in a large skillet over medium heat and sauté the onion and bell pepper until soft.
- Add the chorizo and cook until browned and fully cooked.
- Pour in the apple cider, add paprika, salt, and black pepper, then simmer until the mixture becomes glossy and slightly thickened.
- Split the roasted sweet potatoes, fluff the insides with a spoon, and stuff generously with the chorizo mixture.
- Sprinkle with fresh herbs and serve warm.

- Simmer the cider glaze gently to avoid burning the natural sugars.
- Taste the filling before stuffing and adjust seasoning if needed.
