- 1 1/2 cups diced rhubarb
Instructions
- Preheat your oven to 350 degrees F and grease a 9 by 5 inch loaf pan.
- Whisk together flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
- In another bowl, mix eggs, milk, oil, and vanilla.
- Gently fold wet ingredients into dry ingredients until just combined.
- Fold in the diced rhubarb.
- Pour the batter into the greased loaf pan.
- Bake for 55 to 65 minutes until a toothpick comes out clean.
- Cool on a rack before slicing.
