Ingredients

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2 large eggs
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups diced rhubarb

Instructions

  1. Preheat your oven to 350 degrees F and grease a 9 by 5 inch loaf pan.
  2. Whisk together flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
  3. In another bowl, mix eggs, milk, oil, and vanilla.
  4. Gently fold wet ingredients into dry ingredients until just combined.
  5. Fold in the diced rhubarb.
  6. Pour the batter into the greased loaf pan.
  7. Bake for 55 to 65 minutes until a toothpick comes out clean.
  8. Cool on a rack before slicing.
