Description

A vibrant, spicy sweet homemade Cinnamon Rock Candy that cracks into beautiful ruby red shards, perfect for gifting, snacking, or holiday treats.


Ingredients

Scale
  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • 1 cup water
  • 1 teaspoon cinnamon oil
  • 1 to 2 drops red food coloring

Instructions

  1. Line a baking sheet with foil and lightly grease it.
  2. In a heavy pot, combine sugar, corn syrup, and water, stirring gently.
  3. Attach a candy thermometer to the pot.
  4. Bring the mixture to a boil without stirring and cook until it reaches 300°F which is the hard crack stage.
  5. Remove from heat and quickly stir in the cinnamon oil and red food coloring.
  6. Pour the hot syrup onto the prepared sheet and allow it to spread.
  7. Let cool completely, then crack into pieces.

Notes

  • Do not touch the syrup because it is extremely hot.
  • Add flavoring away from your face because the steam is strong.
  • Dust pieces lightly with powdered sugar to prevent sticking.
