Description

  • 1 pound large shrimp, peeled and deveined
  • 12 ounces spaghetti or linguine
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach, loosely packed
  • 4 garlic cloves, minced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup reserved pasta water

Instructions

  1. Set a large pot of salted water to boil for the pasta and heat a large skillet over medium-high heat.
  2. Season shrimp with salt and pepper. Toss with olive oil to coat.
  3. In the skillet, add olive oil and sear the shrimp for 1–2 minutes per side until pink and opaque. Remove and set aside.
  4. Add butter and garlic to the same skillet, letting it melt and become fragrant. Stir in cherry tomatoes and cook until softened.
  5. Boil pasta until al dente. Add drained pasta to the skillet with tomatoes and garlic butter. Pour in reserved pasta water to loosen the sauce.
  6. Toss in fresh spinach, allowing it to wilt gently. Return shrimp to the skillet and toss everything together until well combined.
  7. Plate the pasta, ensuring each serving has shrimp, tomatoes, and spinach. Serve immediately.

  • Pat shrimp dry before cooking for better sear.
  • Use fresh garlic for a more vibrant flavor.
  • Reserve pasta water to help create a silky sauce.
  • Do not overcook spinach – it should just wilt for a bright color.
