- 1 pound large shrimp, peeled and deveined
- 12 ounces spaghetti or linguine
- 2 cups cherry tomatoes, halved
- 4 cups fresh spinach, loosely packed
- 4 garlic cloves, minced
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup reserved pasta water
Instructions
- Set a large pot of salted water to boil for the pasta and heat a large skillet over medium-high heat.
- Season shrimp with salt and pepper. Toss with olive oil to coat.
- In the skillet, add olive oil and sear the shrimp for 1–2 minutes per side until pink and opaque. Remove and set aside.
- Add butter and garlic to the same skillet, letting it melt and become fragrant. Stir in cherry tomatoes and cook until softened.
- Boil pasta until al dente. Add drained pasta to the skillet with tomatoes and garlic butter. Pour in reserved pasta water to loosen the sauce.
- Toss in fresh spinach, allowing it to wilt gently. Return shrimp to the skillet and toss everything together until well combined.
- Plate the pasta, ensuring each serving has shrimp, tomatoes, and spinach. Serve immediately.

- Pat shrimp dry before cooking for better sear.
