Description

  • 2 pounds Red Potatoes, sliced into 1/4-inch rounds
  • 1 medium Yellow Onion, finely chopped
  • 1/3 cup Apple Cider Vinegar
  • 1 tablespoon Dijon Mustard
  • 1/2 cup Vegetable Broth
  • 3 tablespoons Olive Oil
  • 1 teaspoon Salt (or to taste)
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Chopped Parsley (for garnish)

Instructions

  1. Fill a large pot with water and bring to a boil. Add potatoes and cook for 10–12 minutes until fork-tender. Drain well.
  2. While potatoes cook, heat olive oil in a saucepan. Add onions and sauté until soft.
  3. Stir in vinegar, mustard, broth, salt, and pepper. Warm through to blend flavors.
  4. Transfer warm potatoes to a mixing bowl. Pour warm dressing over them and gently toss to coat.
  5. Let the salad sit for 10–15 minutes to absorb flavors. Adjust seasoning as needed.
  6. Garnish with chopped parsley and serve warm or at room temperature.
